Winterizing the Summer Clothes...WIW

I am having a hard time when it comes to dress clothes!  I don't have many that fit anymore...and it's hard to find ones that suit me or that I even like.  So while I have gotten rid of many, many way too big items...my collection has depleted...a lot! :(  I have no trouble finding jeans and shirts...but I need some dresses and skirts!  In the mean time, I am dressing up and winterizing my summer dresses.  My mom bought this dress for me a couple of months ago...and it's a super cute summer dress that I didn't think I would be able to wear again until next summer.  So on Sunday morning when I was hurriedly trying to get ready and out the door for church...I just kind of threw this outfit together....but I LOVE it!  I can't lie, though, my legs were a little cold~. :)

Two Paleo/Primal Recipes I loved...

I have been checking out all of my Paleo pins on my Pinterest board and wanted to make some yummy food!  Both of these recipes have to do with Pizza, but they are very different!  Both Evan and I loved the Primal Pepperoni Pizza Casserole!  I think it turned out very well for my first time.  You make it using spaghetti squash...which I have never cooked with before.  It was very interesting...I didn't know what to expect, but I will definitely be making this recipe again!!  I made slight changes to the original recipe...one of them was because I was forgetful while I was shopping for groceries.  So I was a bit bummed that I didn't buy the bag of frozen peppers and onions, but that's ok....because this casserole still turned out terrific.  I also left off the cheese because I don't do dairy.

I also made Pizza Stuffed Sweet Potatoes recently.  I really liked them.  Evan was a little iffy about them.  I think next time...I will take the sweet potato out of the skin and then spread the surface area out a bit so that you can load more toppings on it.  It was good, though!  This pic was taken with my tablet using Instagram...so It's not the best, but it will do.  To see the recipe for Pizza Stuffed Sweet Potatoes...go ((HERE))!

Finally Found Them.....

This week has been stressful and crazy and just flat out busy!  I am so glad it's Friday and I'm a few days behind on this post.  Anyhow, here is What I Wore:

{Shirt: Aeropostale, Corduroy Pants: SO brand from Kohl's, Boots: Charming Charlie}

I love these boots....I had never been into Charming Charlie before, and have always been curious what it's like.  I found out it's practically wall to wall with jewelry, accessories, bags, purses, hats, and shoes!  Pretty much every girls dream store...and a plus is it's all reasonably priced!  

I gotta say that I'm loving the pants too...they are actually "mini bootcut", but the legs were snug enough all the way down that I just barely had to fold the bottom flap over to wear them comfortably in these boots.  They are corduroy...so probably won't be very practical in the Summer, but I'm loving them for Fall and Winter! :)

Maybe next week will be less hectic...and yes, I am even rushing through this post so that I can fly out the door when my husband gets home to go to the gym! :)

Almond Flour Paleo "Corn" Bread

My husband has been missing Cornbread with his chili for about a year now.  He is allergic to corn as well as some other things.  I finally came across an easy enough recipe that promised a "cornbread" look-a-like...or I guess I should call it a "cornbread" taste-a-like!  Plus, I wanted to try this recipe because it is Paleo...for me.  I have been wanting to try baking something with Almond Flour lately and this recipe was my first using it.  It was super simple, but I had to change the baking temp. because my oven was just not cooking it through using the temp. and time from the original recipe...which can be found HERE.  I may use a tad less honey next time and see how it turns out.  It is great as is, but it probably doesn't have to be as sweet.

Almond Flour Paleo "Corn" Bread

Here is what you need:

1 1/2 cups Almond Meal/Flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/3 cup raw honey

4 eggs

I wanted to have farm fresh eggs all cute with brown shells...because my dad has 50 or so laying hens, but he hasn't given me any eggs in a while.....boo! 

Directions:

Combine all the ingredients with an electric mixer until there are no lumps.  Pour into a greased baking dish or muffin cups.  I used a small round glass dish.  Cook in a 320 - 350 degree oven for 25 to 30 min.  The original recipe said to cook for 15 min., but my Almond "Corn" bread was nowhere near done at that time.  

Even the batter resembled cornbread!! :)

It's finally done and we couldn't wait to give it a try!

I also made Paleo Chili to go with our Faux Cornbread! :)

It's low-carb, and allergy-friendly too...so if you give it a try...let me know! :)

Hoodies, Jeans, and Boots!

Hi y'all!!  It has been so so nice here in the Carolina's this week!  It was rather cold on Monday and Tuesday.  It warmed up a bit midday today, though.  I love hoodies, jeans, and boots together.  I was trying out the socks over the jeans with boots look here.  I actually don't love these boots, but I injured my big toenail this past weekend and couldn't wear anything with a heel!  Oh, and I had to do my own little photo shoot here...lol~!

It's A Date

This weekend Evan and I got to go out for a good bit of the day by ourselves.  My mom watched the boys, which is always so nice!  It was a fun day just being together.  We ate breakfast at Stax's, and we had a gift certificate that I won...so that only cost us $5!  Then we shopped around a bit, and hit up a movie!  We watched "Looper"....it was pretty good too, and that only cost us $4 because Evan found a Regal gift certificate in the parking lot of a gas station that had $10 on it!  So we got off having a pretty cheap date!

Yay....For Boots and Scarves

As much as I hate to see my summer tan fade away....I am welcoming boots and scarves back into my wardrobe!  I am ready for Fall.
